Mahi-mahi tartare
1- In a salad bowl : cut in small cubes, the Mahi, the cucumber, the red onion and the coriander
2- Zest the lime and lemon, the garlic, the ginger then add it to the salad bowl
3- In a bowl : squeeze the lime and the lemon, add the soy sauce and the olive oil
4- Pour the vinaigrette in the salad bowl, seasoned with some « Piment d’Espelette » and some « Fleur de sel »
Chef advice : delicious with an Arugula salad, snow peas and soy bean sprouts
