HAZELNUT WAFFLES, MILK CHOCOLATE SAUCE

Waffle Batter


  • 125g flour
  • 125g hazelnut flour
  • 40g sugar
  • 2 eggs
  • 500g whole milk
  • 100g melted butter
  • 1 vanilla bean
  • 10g baking powder
Recipe of waffle
  1. In a bowl: mix the flour, the hazelnut flour, the sugar and the baking powder
  2. Add the eggs (beaten), mix well
  3. Gradually, add the milk while stirring vigorously with a whisk to avoid clumping
  4. Add the vanilla bean (previously scraped), the melted butter and 1 tablespoon of salt. Mix well
  5. Leave to cool 2 hours (minimum) into the refrigerator before cooking into the waffle maker

Milk chocolate sauce


  • 50g water
  • 50g liquid cream 30%
  • 50g whole milk
  • 150g milk chocolate
Milk chocolate sauce
  1. In a saucepan: heat the water, the milk and the liquid cream over low flame
  2. Pour the content of the saucepan into the chocolate (previously broken into pieces)
  3. Stir with a whisk, the sauce is ready

Chef advice : wonderful with a scoop of vanilla ice cream and roasted hazelnuts
